If they are too high level just farm a little bit. You can also try to get a better weapon but the rogue class is just not a high damage output in one hit class, it's more about hitting often and not getting hit.The problem is not your build though it is normal that after the pathway it gets really hard because there is a difficulty spike there. After the catacombs with the levels and loot you get there the pathway won't be that hard anymore.Also the Champion fight is a pretty long fight because he himself is pretty fast and agile so regardless the class or build you are playing the Champion fight is not fast and depending on your playstyle not easy.And yes the rogue build will be fun later in the game when you get your first 'special' weapons and the rogue will start to deal much damage but also in NG when you can combine the rogue with the warrior/brawler and you can use your rogue skills with f.e. Two handed swords.

There are plenty of youtube videos about on how to get it)The general use of this item is to respec your stats (You can pick this item up any time so get it now if you want to respec) but there is a hidden use for it. Those three statues on the left hand side of the commanders arena?

Whatever one you put it in you will recieve the same type of weapon that it holds (One holds a dagger, the other a sword and the third a hammer)Simply damage the commander enough so he loses one bar of health, kite him over to the statues and then walk away, eventually he'll turn and destroy the statue you put the stone in (Netting you an achievement) and when the fight is over you'll be able to pick up the weapon (From the base of whatever statue you put the stone in) and a huge amount of early game EXP.Seriously, this is invaluable for those just starting out. You get a good few levels worth of EXP and a very decent early game weapon.
Hopefully that makes things easier for you when starting a new game. The catacombs is normally an area you go to after you go to the Rohgar realm. This of course isn't a rquirement but it makes the mobs in the catacombs easier since you will be similarly levelled.If you have yet to beat the champion, the best thing to do (regardless of class) is to equip a kite shield and get your shield bash parry timings down.You can shield bash his charge which will stun him and as a result it gives you a window to get some serious damage in.Staves are your friend as a Rogue and if you manage to find 'Prejudice' (easy to find) and can put a luck rune into it, it'll become your main weapon until late game.
